Chewy Smartie Cookies

Sometimes you just need a simple reliable recipe. As much as I love trying out all manner of new techniques and flavours in my baking, there are times when all you want is simplicity. 

The humble cookie would appear to be something that you can't go wrong with. I beg to differ. I have had countless cookie misfortunes, one involving Donal Skehan's Chocolate Chip, Oat and Raisin cookies (which I strongly recommend you do not attempt to make at home, unless you are very fond of soft oaty pancakes, which are nothing like of cookies at all) and several others over the years which have ended up rather cakey as opposed to chewy cookies.



These are nothing of the sort. Crisp, chewy, buttery...they're all you'd really ask for in a cookie. They take about ten minutes to make, and twelve to bake. The smarties are not optional. 




Chewy Smartie Cookies

Recipe from BBC Good Food Magazine

Ingredients:

100g/4oz butter, softened
100g/4oz light muscovado sugar
1 tbsp golden syrup 
150g/6oz self raising flour
85g/3oz Smarties (about three tubes, though there's no harm in extra!)

Method:

1. Preheat the oven to 180C/Gas 4/Fan oven 160C. Beat the butter and the sugar in a bowl until light and creamy. Beat in the syrup. 

2. Work in half the flour. Stir in the smarties with the remaining flour and work the dough together with your fingers. Divide into 14 balls, no need to flatten them. Place them well apart on baking sheets. 

3. Bake for 12 minutes, until pale golden at the edges. Leave to cool for a good ten minutes or so, before putting them onto a wire rack to cool. Great with a glass of cold milk.
